This is an exciting opportunity to be part of an expanding sector within an established company. The Plaza Group, which falls under the Supermac's umbrella of companies, Operates Macs Place Deli (incorporating Carvery & Bakery) in several company run Motorway Service Station Sites, owith aggressive plans to further extend its locations in the coming years.

Macs Place Deli can be found in the following 8 Sites: The Barack Obama Plaza Moneygall, The Galway Plaza, M20 Plaza Mallow, Tipperary Town Plaza, The Kinnegad Plaza, Charlestown Service Station, The Portlaoise Plaza and N17 Plaza Tuam.


Oversee and manage the Carvery/Deli's/Bakery's across all 8 sites, this includes all aspects in relation to menu offerings at each of the carvery/deli areas, together with the ongoing development of food to go options which are sold in the retail shops of the Motorway sites we trade in. This incorporates fresh food offerings (Hot & Cold Deli's, Carvery's, Bakery, Soup, Pre Packed Sandwiches, Baps, Rolls & Wraps, together with many breakfast pots and fruit offerings which we are continuing to develop in keeping with market demands. The primary purpose of this role is to continue to develop quality carvery/deli style dinners, in keeping with market trends, served by well trained staff, whilst ensuring standards are met in terms of HACCP, food and labour costings and overall sales and profitability. This is achieved through the effective Management and Leadership of on site Teams, product development and product quality, and an eye for detail and presentation. Forward thinking and a creative flair for food is essential.

Job Description

  • Oversee and manage the fresh food offering across all Delicatessen and Retail Outlets
  • Provide Leadership and support to Chef's/Cook's and Deli Managers particularly in relation to product development, menu design, display and presentation, together with people development and general standards.
  • Supplier approval, product development, costings, pricing, marketing.
  • Management of overheads, food costsings, labour costings, waste etc.
  • Staff recruitment, training, development.
  • Product sourcing and development together with packaging and observation of upcoming trends
  • Competitor analysis
  • Food Quality monitoring, cleanliness monitoring
  • Food Merchandising, display and presentation
  • Menu planning, cooking trials, tastings
  • Sales analysis and trends

Personal Requirements

  • Proven track record managing food offerings in a similar multi-site role is desirable but not essential
  • Proven ability in managing people, leading by example, coaching, counselling and developing teams
  • Hot & Cold deli and carvery experience an advantage
  • Excellent communication skills
  • Can do attitude, business savvy, astute.
  • The ability to lead teams, providing support and guidance, whilst maintaining control.
  • Excellent knowledge of HACCP systems & Food Safety
  • Self Motivated, a go getter.
