OBJECTIVE:
To maintain consistent standards of service, ensuring customer satisfaction while creating a work environment that supports the organisation’s values. To contribute to the profitability of the Deli through operation of effective cost controls and excellent customer service. To create and Develop dishes and products that are tasty, well presented and in keeping with Mac’s Place offering whilst constantly developing new products to remain at the forefront of delivering tasty high-quality food.
Responsible for:
Efficient day to day operations of kitchen function, delivery of food service, systems compliance and delivery of group standards
Key Responsibilities:
Customer care:
- To ensure all customers receive a genuine, warm, friendly, courteous welcome on arrival
- To manage the Deli’s kitchen operations, ensuring delivery of exceptional customer service
- To ensure systems are in place to handle all customer queries promptly and efficiently
- To empower, encourage and promote employees to make on the spot customer satisfaction decisions
- To ensure all customer feedback is acted upon in a timely manner ensuring the relevant people are informed and that all necessary action is taken to prevent re occurrences.
- To randomly inspect all kitchen & back of house areas on a daily basis to ensure all facilities and equipment is clean and well maintained
Standards:
- To be standards driven and detail-oriented with the ability to organise and plan ahead
- To ensure high standards are achieved at all times
- Ensure that the highest possible standard of personal hygiene, appearance, body language and conduct of employees is maintained by all employees in department
- To order and control food stock appropriate to forecasted levels
- To manage the group & HAACP standards for food deliveries
- To ensure accurate temperature records and food labelling are maintained and up to date
- To ensure kitchen cleaning rotas are adhered to and records kept
- To ensure the kitchen uniform and personal hygiene guidelines are adhered to
- To ensure daily, weekly and monthly administration is to group standards and meets deadlines
- To ensure only group approved suppliers are used for orders
Duty Management:
- To handle various tasks at one time while maintaining professionalism and a calm approach
Training:
- To assist with training and development with departmental managers and training initiatives
- To ensure all training is recorded in accordance with agreed procedures
- To attend training as required and to ensure that employees attend training as required
- To train and develop kitchen brigade to company standards
Flexibility:
- To accept flexible work schedules when necessary for uninterrupted service to customers. To maintain flexibility within team
- To provide support where necessary in other areas of the Deli
Health & Safety responsibilities:
- To ensure all accident and incidents are investigated and reported to the relevant people and to assist in providing all relevant backup. To ensure all investigations and appropriate action is taken to ensure incident does not re occur.
- To report defective materials and equipment to appropriate individual and to ensure defects are fixed in a timely manner
- To be fully aware of the fire and emergency procedures within the Plaza and to ensure that all departmental employees are aware
- To comply with all health, safety and welfare statutory requirements
People management:
- To assist in the recruitment and selection of departmental staff in accordance with agreed Deli procedure
- To ensure the agreed disciplinary and grievance procedure is adhered to at all times
- To ensure all employee counseling is documented and passed to HR, including lateness/absence and return to work forms
- To work with the management team to ensure good morale amongst the team at all times
- To ensure all problems are resolved immediately within the departments
- To motivate your department personnel to achieve highest standards in customer satisfaction
- To carry out appraisals and job chats to company guidelines
Communication:
- To communicate all information with management in a timely manner and to update information and communication as required
- To ensure department holds daily shift meetings with employees
- To attend meetings as required
- To organize a monthly department meeting with set agenda
Sales and costs:
- To ensure every effort is made to promote the Deli and plaza.
- To have a knowledge of agreed Deli budgets and results
- To achieve company food GP and to analyse shortfalls
- To proactively control staffing levels to ensure they are in line with budgets and business levels within the department ensuring that adequate cover is maintained
- To ensure ordering and stock levels are appropriate to sales levels
- To ensure substandard food is returned to supplier with appropriate paperwork and the supplier contacted
- All deliveries to be checked and signed for by Head Chef or designated receiver
- To control wastage and recording of same
- To ensure Staff Food Policy is adhered to with no unauthorized food to leave kitchen
- To carry out accurate stock take on a monthly basis and as requested
Other:
- To carry out any other reasonable request from management
- To make sound decisions in a fast paced and busy environment
WORK ENVIRONMENT:
Fast paced “non-stop” environment. Physically demanding at times due to certain requirements of the business with regards to the level of business, quality of staff, quantity of staff. Teamwork is essential to ensure the procedure runs smooth in all areas, and communication flows.
